Cheesy Quinoa Bread

I’m trying not to blog until after the wedding because I just have way too much on my plate but this recipe just could not wait.

It’s not often that I try something on Pinterest and it actually goes well, but this cheesy quinoa bread was a hit and gone as soon as I put the plate down!

Healthy Homemade Chai Tea Latte

My favorite Starbucks drink!

So is this chai tea latte as good as a coffee shop’s? No. But it also isn’t full of who knows what and tons of calories. I will say it is still good and it does cure my craving. If you’re still wary of it, just give it a try. Once won’t hurt you!

Ingredients:

  • Chai Tea (My favorite is Tazo. You can’t go wrong with any tazo tea)
  • Hot water
  • unsweetened vanilla almond milk
  • 1 tablespoon of Stevia

All you have to do is make tea like you normally would but only fill the mug 3/4. Allow tea to steep. Go ahead and put a tablespoon of stevia into the tea BEFORE the milk.

Then pour the almond milk in to fill the rest of the mug up. Sometimes I’ll put it in the microwave after to make it a little warmer since the milk cools it off.

Recent Eats.. and some not recorded treats

I want to know how you make a healthy Chai Tea Latte. I love them too!

So as you can see from my title I added “not recorded treats” which means I may have given into sugar temptations and not taken pictures. Damn you coworker birthday celebrations! I can’t blame anything though except for my weak will power. I did have some healthy meals though 🙂

BREAKFAST: Scrambled eggs with ketchup, can’t eat them without and a biscuit. Haven’t had a biscuit for a long time. It was ok. I actually like the flax cereal and almond milk better.

LUNCH: I had birthday potluck lunch “leftovers” at work today. A small salad, more of that great citrus pecan quinoa salad and our favorite desert, Chocolate Bread Pudding. An attorney I work with is such a great chef, she would make Gordon Ramsey quake with fear. I found a recipe for Chocolate Bread Pudding I thought I’d share:

Ingredients
1 (1-pound) loaf French or Italian bread, cubed
3 cups milk
1/4 cup heavy cream
1/2 cup coffee flavored liqueur
1 cup sugar
1 cup packed light brown sugar
1/4 cup cocoa powder
1 tablespoon vanilla extract
2 teaspoons almond extract
1 1/2 teaspoon cinnamon
6 eggs, lightly beaten
8 ounces semisweet chocolate, grated
Whipped cream (optional)

Chocolate Bread Pudding

Directions
Preheat oven to 325 degrees F.
Lightly grease a 13 by 9-inch baking dish and place the bread in the dish. In a large bowl, whisk together the milk, cream, and liqueur. Using another bowl, combine the sugar, brown sugar, and cocoa powder and mix well. Add the sugar mixture to the milk mixture and mix well. Add the vanilla and almond extract, and cinnamon to the beaten eggs. Combine the egg mixture to the milk mixture and mix well.
Stir the grated chocolate into the mixture. Pour the mixture over the cubed bread in the pan. Let the mixture stand, stirring occasionally for approximately 20 minutes or until bread absorbs most of the milk mixture. Bake pudding for 1 hour or until set. Check pudding by inserting a knife through the middle and it should come out clean.
Serve the pudding warm, or refrigerate and serve chilled with whipped cream if desired.

DINNER: Brown rice, 2 Morningstar mushroom burgers
